Zesty Hamburger Soup
Makes 2 meals that Serve 3 people
1 pound ground beef
2 cups chopped celery
1 cup chopped onion-chopped
2 teaspoons minced garlic
4 cups water
(1 ½ cup small noodle shells on cooking day) *I used some little curly noodles we already had*
4 jalapeno slices
4 cups tomato sauce
2 cans diced tomatoes with green chiles
2 tablespoons sugar
Brown beef, drain. Cool. Place in gallon sized freezer bag. Add celery, onion, and garlic. Add water and jalapenos. Make sure the beef is completely cooled before putting in the bag, and even more importantly, that it is completely cooled before putting in the freezer to avoid freezer burn. I put mine in the fridge for a bit to make sure the meat was cooled.
On Cooking Day
Pull out in the morning. Or run under warm water just enough to get it out of the bag. Cook on low heat 6-8 hours or on high heat for 4 hours in your crock pot. Add the noodles for the last 20-25 minutes.
Serve with roles or bread. We ate ours with white bread and butter, it was DELICIOUS!
Can be frozen for up to 3 months
*Cookers note: I ran mine under warm water just enough to get out of the bag and cooked on high heat for 4 hours. With this exact recipe, I split it into two freezer bags before freezing, and I was able to serve myself, my husband (2 servings) and my niece. Total cost for this portion, about $3 to feed the 3 of us. This had just enough spice with the jalapenos to be just perfect, and not too much spice that the niece not the hubby got heartburn.

This meal can also be completed and eaten on the same day. The only change is instead of dumping everything into a freezer bag, add everything to one pot on the stove or in the slower cooker after browning and draining the beef (except the noodles) and add the noodles the last 20-25 minutes of cooking. You would just heat this up until it is cooked through and the veggies have just a little bit of snap left in the bite.
