Dinner Fit For a Pirate

For National Talk Like a Pirate Day (September 19th)  I made Pirate Pork for dinner.

Pirate Pork

Feeds 4 adults and 1 child.
2 pound pork loin
2-16 ounce cans pineapple chunks
1-16 ounce can sliced pineapple
1/4 to 1/2 cup Captain Morgan’s spiced rum
4 tablespoons brown sugar
Salt, pepper, onion powder, garlic powder, celery salt to taste.

Place pork in  container, pour rum over the top, rub 3 tablespoons brown sugar into pork, season with other seasonings listed. Cover and marinate for minimum of 1 hour, or even overnight. Pour one can pineapple chunks (juice and all) in bottom of crock pot. Place meat and juices into crock pot. Pour 2nd can pineapple (juice and all) chunks around meat. Place pineapple slices on top of meat. Use last tablespoon of brown  to top meat and pineapple. Cover and cook on low heat for 6-7 hours, occasionally mixing it around and pouring cooking juices over the top of the meat.

Goes really well with honey corn bread and my oven roasted potatoes.
