Taco Casserole

I got this recipe from beautyandbedlam.com and it is so easy and so wonderful!

1 pound ground beef

1 small onion

1/2 tsp garlic powder

1 envelope of taco season

1 can (8ounce) tomato sauce

1 cup sour cream

1 cup cottage cheese

2 cups crushed tortilla chips (the leftovers in the bad is perfect)

2 cups grated Monterrey jack cheese.


Preheat over to 350 degrees. Brown the beef in a skillet, drain. Add cut up onion, garlic powder, taco seasoning, and tomato sauce to beef, mix and set aside.

In medium sized bowl, combine sour cream and cottage cheese, set aside. Place half the crushed chips in the bottom of a 2 1/2 quart casserole dish that has been coated with a nonstick spray. Add enough meat mixture to cover the chips, then cover the meat with half the sour cream mixture. Sprinkle with half the grated cheese. Repeat layers until out of mixture.

Bake uncovered for 30-35 minutes, until cheese melts and casserole is heated through.

For a little extra color, add some sour cream and/or guacamole to each personal serving. Delish!
